Cold Fermentation
Freshly picked blueberries undergo minimal washing (preserving natural yeasts) before entering cold fermentation tanks, where slow fermentation (18-20℃) locks in anthocyanins and fruit aromas. The fermentation process lasts 21-28 days, 30% longer than industry average, to extract richer flavors.
Traditional Aging
Cranberries are blended with white honey in perfect proportions and aged in traditional clay pots for 3 months, achieving a natural balance between acidity and sweetness, like "biting into a ripe fruit." Allowing the wine to breathe naturally develops more complex flavors.
Annual Adjustments
Our winemakers adjust techniques based on each year's berry characteristics: the 2022 blueberry wine had 3 extra days of skin contact for softer tannins; Cranberry wine reduced white honey by 10% to highlight the berry's freshness. Each batch has detailed production records.
Quality Control
We implement strict quality control standards, with each batch undergoing at least 5 rounds of tasting and chemical analysis to ensure it meets our quality requirements.
